Peanut Butter Cupcakes!

I baked these for the dvd night with my sisters last night. Oh how I love Bridesmaids, Jon Hamm is too amazing in it. Almost as funny as he is in 30 Rock. Anyway, these were a big hit so I thought I'd share the recipe, it's from the Primrose Bakery book again.

Peanut Butter Cupcakes

Ingredients (makes 12)

75g unsalted butter (at room temperature)
130g smooth peanut butter
190g soft dark brown sugar
2 large eggs
1 teaspoon vanilla extract
120g plain flour, sifted (the key to good cupcakes!)
1 teaspoon baking powder
Pinch of salt
60ml semi skimmed milk (at room temperature)

Method

1. Preheat oven to 160c (fan)/180c/350F/gas mark 4, line cupcake tray.
2. In a large mixing bowl cream the butter, peanut butter and sugar.
3. Add the eggs one at a time, mixing for a few minutes after each addition.
4. Stir in the vanilla extract.
5. Combine the flour, baking powder and salt in a separate bowl, add a third of the flour to the creamed mixture and beat well. Pour one third of the milk in and beat again. Repeat these steps until all the flour and milk has been added.
6. Carefully spoon mixture into the cases filling to about two thirds full. Bake in the oven for 20-25 mins, until a skewer comes out clean. When you remove them from the oven, leave the cupcakes in their tins for about 10 minutes before transferring them to a cooling rack.
7. When cool, decorate with the chocolate ganache icing (recipe below).

Chocolate Ganache icing

Ingredients (enough to ice 12 cupcakes)

60ml double cream
30g unsalted butter (room temperature)
300g milk chocolate (I used Galaxy)
1/2 teaspoon vanilla extract

Method

1. Put the cream and butter in a saucepan on very low heat, stir continuously until melted. As soon as the butter has melted, remove the pan from the heat.
2. Add the broken pieces of chocolate and leave until it has melted, this can take up to 10 minutes. During this time you should keep stirring.
3. Add the vanilla extract and mix again,
4. If the icing is too runny, leave for a while at room temperature then beat just before you start to decorate the cupcakes. It's messy, but the chocolate will set slightly in time. If making these to transport I'd do it so you have an hour or two to let the chocolate set nicely so it doesn't drip everywhere.

The book says to decorate with peanut butter chips, but such amazing things are not available in the UK. I'll have to order some off the internet for next time! I used M&Ms instead.
